It is not a coincidence that Almond Milk is our favourite homemade plant based milk. We love its taste, it costs much less than store-bought ones and we can also benefit from leftover pulp. And what's more, it has no added sugar, thickeners, or any kind of additives.
We use Almond Milk mostly in our breakfast. I use 165 g of almonds to prepare 1 liter of milk. So, with 1 kg of almonds I make 6 liters of milk. I buy almonds in 1 kg packages. This way I reduce the cost even further.
Although almond milk recipes in the cookbooks and on internet are very alike, the amount of the ingredients changes. Please see the notes for the details.
Ingredients:
165 g raw almonds
1 liter water
Notes:
- If you'd like to make a thicker milk reduce the amount of the water and use about 500 - 750 ml depending on your preference.
- Some people blanch their almonds but I don't find it necessary. It takes too much of time and I don't find it is worth the effort.
- If you'd like to sweeten your milk you can add 1 - 2 Medjoul dates. We prefer ours unsweetened.
- Not every city has drinkable tap water so remember to use drinkable water also while soaking the almonds.
Preparation:
- Soak almonds overnight, for a minimum of 8 hours.
- Drain soaked almonds, discard the soaking water and rinse.
- Place the almonds and half a liter of water and blend at the highest speed until smooth.
(Thermomix owners => Place the almonds and half a liter of water in TM Bowl and blend for 30 seconds on Speed 10.)
- Add the remaining half a liter of water into the blender and blend for another 1 - 2 minutes.
(Thermomix owners => Add the remaining half a liter of water into the TM Bowl and blend for 1 minute.)
- Strain using a nut milk bag, cheesecloth or something like a fine muslin cloth.
- Put your milk in a sealed bottle and the pulp in a sealed container. Store them in the fridge for up to 3 days. Remember to shake the bottle well before drinking.
Ho do I use my Leftover Almond Pulp?
There are many ways to use up your leftover almond pulp which is high in healthy fat and fiber.
You can...
- add it into your oatmeal breakfasts like our Mixed Berry Overnight Oats.
- use it in your smoothies like our Oat Blueberry Breakfast Smoothie.
- mix it with various herbs and spices to use it as a spread.
- add it into your meals, soups and sauces Tofu Arrabbiata Sauce, Roasted Winter Squash Sauce or Hummus.
- You can add it into your falafel or any kind of plant based veggie burgers.
